Tuna Zucchini Patty w/ Angel Eggs and Grape Tomatoes

This is a great and nutritious lunch packed with good fats and protein.

The Tuna patty is packed with shredded zucchini which gives it moisture. The angel eggs contain good clean ingredients like sour cream instead of mayo, apple cider vinegar instead of plain vinegar, and sweetened with powdered swerve with probiotics instead of regular sugar and therefore much healthier than regular deviled eggs.

Try to use a higher quality tuna to avoid all the fillers and soy that seem to be added to most I’ve seen. I typically will use this type of tuna which is much cheaper if bought in bulk. The cuts seem to be thicker.

To make Zucchini Patties alone just use 2 cups Zucchini instead of tuna.


Tuna/Zucchini Patty Recipe

5 oz. Albacore Tuna

Half a medium Zucchini shredded

2 eggs

1/4 cup onion finely chopped

1 cup of shredded 3 cheese blend

1/2 cup Almond flour

1/2 tsp Himalayan salt

1/2 tsp black pepper

1/2 tsp garlic powder

1 Tbps Coconut oil for cooking

  1. Combine all ingredients in a bowl until well mixed. Take about 1/3 cup of mix and shape into a round patty.

2. Heat coconut oil and lightly pan fry each patty for about 3-4 minutes on each side until a nice brown color

Enjoy warm!

If you want to omit the tuna just use 2 cups of Zucchini instead to make Zucchini Patties!

Angel Eggs Recipe

6 hard boiled eggs

1/2 cup sour cream

1 tsp Dijon mustard

1 tsp apple cider vinegar

3/4 tsp powdered Swerve

Salt & Pepper to taste

Paprika to sprinkle

  1. Cut each egg in half and remove cooked yolks. Place cooked yolks in a bowl and add all ingredients except for paprika.
  2. Mix ingredients until well combined. Place mixture into a sandwich plastic bag and push towards one end of bag. Snip the tip with scissors and squeeze mixture into cooked egg halves.
  3. Finish by sprinkling paprika over each egg.
